1 medium potato, cubed (I use Russet)
3 stalks celery, chopped
1/2 medium onion, diced
2 cups baby carrots, chopped
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon oregano
1/4 teaspoon coriander
1/4 teaspoon turmeric
1 teaspoon garlic powder
1 teaspoon Thai seasoning
4 teaspoons extra virgin olive oil
1. Spray a skillet with the cooking spray and cook the potatoes, onions, and celery until the potato is done enough for your liking.
2. While the potato mixture is cooking, put the carrots into a pot with enough water to cover them and boil for 5 minutes.
3. When everything is cooked, combine in a bowl with spices and olive oil. Enjoy.
Source of recipe: I used the Moroccan carrot recipe from this site, and then sort of played around with the other things...it turned out pretty good.
