1 clump kefir grains
meat of 2 thai young coconuts, blended
Handful organic strawberries
1 teaspoon vanilla extract
1 tablespoon agave nectar (optional)
1. Wrap the kefir grains in cheesecloth. Pour the blended coconut meat paste into a glass jar and submerge the grains in the paste. Screw on the lid, and let sit in a dark kitchen cabinet for 2 days.
2. After 2 days, you will notice the mix has become more porous and a consistency almost like a spongy cottage cheese. Remove the kefir grains and keep for your next batch.
3. Put the fermented coconut meat paste in a blender, and blend along with the strawberries and vanilla. Stir in the agave nectar, if using. Enjoy!
