2 1/2 cups flour
3/4 cup wheat bran
1 1/2 tablespoons sugar
1 teaspoon salt
1 pack (2 1/4 teaspoons) yeast
1 1/4 cup warm water
3 tablespoons vegan butter, for pan
1. Combine dry ingredients together in a large bowl. Slowly add the warm water to the dry ingredients until the bread dough is formed. Cover the bowl with a cloth and leave for 30 minutes to rise. Then gently press the dough down, kneading it again until it returns to its original size.
2. Cover the bowl again and let it rise for 25 minutes. Then press the dough down again until it goes back to its original size. By rising twice, the bread will become very airy and light when baked, this extra rising time will be well worth it.
3. After the dough has risen the second time (55 minutes into your preparation time), press the dough down again until returns to it original size , but this time, place the dough into a non stick baking pan, or a buttered baking pan. Let rise for 20 minutes this time. (This takes you time to 75 minutes of preparation time.) Preheat oven to 400 degrees F.
4. After the bread has doubled its size or has filled out the pan well, you can now place it into the oven. When you place the bread into the oven, decrease the oven heat to 350 degrees. The bread should be finished baking after about 35 to 40 minutes at 350 degrees.
