2 cups macadamia nuts, raw are good, but toasted are fine too
1 cup coconut flakes
1 cup chocolate chips
1) Spread parchment paper over a large plate.
2) Place coconut flakes in a pan on the stove top and stir constantly at medium heat. Continue to stir until coconut becomes tan/light brown, about 4-5 minutes at the most. Set this aside while melting chocolate.
3) Melt chocolate in microwave, taking care it doesn't burn. This usually about 1.5 minutes for me.
4) Roll macadamia nuts in melted chocolate, than roll in toasted coconut flakes and place finished nut on the parchment paper. Repeat until all the nuts are covered in coconut and chocolate and then put the plate with the parchment paper in the fridge to cool.
Almonds would make a good substitute.
