2 quarts rice milk (I use Rice Dream rice milk)
1 pint vegan creamer (I use Silk Creamer)
1 - 14.5 ounce can coconut milk
1 cup sugar
2 tablespoons vanilla
1) Pour all ingredients into an ice cream maker container. Let the ice cream maker do the work. In about 30 to 45 minutes you should have fantastic homemade "ice cream"!
Source of recipe: We were attended a barbecue with friends and I decided to mix some things together for homemade "ice cream" to see what happened. Non-vegan adults and children loved it and could not tell a difference! The coconut milk did not stand out. Maybe next time I'll sub another can of coconut milk for the Silk creamer to make Coconut "ice cream".
