2 pounds firm tofu
1/2 cup chopped red onion
1 cup marinated sundried tomates, drained with oil reserved
1 cup marinated artichoke hearts, chopped
1/2 cup black olives, chopped
1/2 cup garlic and jalapeno stuffed green olives, chopped
1/8 cup nutritional yeast
2 tablespoons dried basil
Salt to taste
1) Open tofu and let drain while you prepare other ingredients.
2) In a warm skillet add the reserved tomato oil and red onion, let cook for 3 minutes to soften the onion. Crumble the tofu into the pan, cook stirring occasionally for 7 to 10 minutes. Add all other veggies and seasonings and cook another 15 minutes.
