1 yellow pepper, diced
1 red pepper, diced
10 mushrooms, quartered
3 celery stalks, diced
1 onion, chopped
1 can diced tomatoes (796ml / 28oz)
1/2 can white kidney beans
1 pkg Chili seasoning mix (spices- red chili,chipotle and ancho peppers, onion+garlic, salt, sugar)
1/2 cup vegetable broth
1 tablespoon olive oil
1 can tomato paste
In a large pot using med-high heat Olive Oil, add onions and cook for 2 minutes until tender. Add peppers, celery, zucchini and cook for 10 minutes then add mushroom and cook until veggies are tender. Add seasoning, diced tomatoes (with their juice), tomato paste, kidney beans and simmer on low-medium heat covered for 30-45 minutes, stirring occasionally. Add vegetable stock when chili thickens up and add more if you like a thinner chili.
*Swap any of the vegetables with your favorites or whatever you have on hand.
*If you don't have the chili seasoning you can make you own using various spices.
