2 smallish russet potatoes, washed
2 tablespoons nutritional yeast
Plain soymilk
Ketchup (optional)
1. Poke potatoes with a fork about 5 times. Place potatoes in microwave and cook for about 8 minutes (or until tender).
2. Mix together the nutritional yeast with enough soy milk to make it creamy. When potatoes are done, mash them in a bowl.
3. Drizzle the nutritional yeast mixture over top of the potatoes.
Enjoy 'em just like that or dip 'em in some ketchup like I do. Yum.
Source of recipe: I was sick of eating oatmeal for breakfast and wanted some kind of potatoes. This is what I thought would be good and hey--it is.
