2 cups shredded coconut
3 tablespoons carob powder
3 tablespoons raw cacao powder (or carob)
5 tablespoons maple syrup (a bit more if using all cacao)
2 teaspoons vanilla
4 tablespoons melted coconut oil
2 tablespoons arrowroot flour
pinch of salt
Dried coconut (for on top)
1. Combine all ingredients in a bowl.
2. Spoon dough and shape into small round discs or spoon"mounds" like traditional macaroons on parchment on a baking sheet.
3. Sprinkle or press in coconut. Let firm up in freezer.
