2 cloves garlic, crushed
1 tablespoon vegan margarine
2 cups vegetable broth
8 ounces vegan tortellini
1 - 15 ounce can spinach, juice reserved
1 - 14 ounce can stewed tomatoes, juice reserved and tomatoes chopped
Grated soy cheese, to garnish
1) In a soup pot, cook garlic in margarine over medium heat until soft. Add both and tortellini and bring to a boil. Reduce heat and simmer 10 minutes.
2) Stir in spinach and tomatoes. Simmer 5 minutes. Enjoy with your favorite bread.
