1 cup beans, cooked
1/4 cup corn, cooked
1/4 cup peas, cooked
1/4 cup carrots, chopped into cubes and cooked
1/4 cup squash, chopped into cubes and cooked
vegan salad dressing, to taste (optional)
plain corn chips, to taste (optional)
chopped avocado, to taste (optional)
1. In a pot, combine the beans, corn, peas, carrots, and squash; heat on low heat for 2 to 3 minutes to warm through.
2. Drizzle with dressing and serve with chips and avocado.
