1/2 cup mashed bananas (about 1 banana)
1/2 teaspoon lemon juice
1 tablespoon vegan rum, optional
1/4 cup vegan butter
3 cups powdered sugar
1. In a small bowl, mix lemon juice with bananas to keep them from turning brown. If using rum, mix in as well.
2. In a larger bowl, cream the butter until it is soft and fluffy.
3. Mix in bananas and sugar and continue mixing until fluffy. (If you added rum, I like to add a little more sugar to thicken the frosting up a bit)
This frosting is amazing. It is now a my favorite atop chocolate cupcakes. It's also great over vegan crepes.
