2 English cucumbers, sliced thinly
1 large red onion, chopped
3 tablespoons vinegar
3 tablespoons vegan sour cream or mayonnaise
1/2 teaspoon agave nectar
2 teaspoons fresh, chopped dill
pita bread, to serve, optional
1. Add onion to cucumber, and set aside.
2. In a separate bowl, mix vegan mayo, vinegar, agave, and dill.
3. Refrigerate until chilled and serve as is or stuff inside a pita.
