1 cup vegan butter (I use Earth Balance)
1/2 cup sugar
1/2 teaspoon vanilla
1 cup flour
1 cup whole wheat flour
1/4 cup jam (I use blackberry and raspberry)
1) Preheat oven to 350 degrees Fahrenheit.
2) Cream together the vegan butter, sugar, and vanilla. It should be light and airy. Add 1 cup of flour and mix well. Then add whole wheat flour, 1/4 cup at a time, and mix with hands. The mixture should be dry.
3) Form small balls with your hands and press down onto cookie sheet. Make a thumbprint indention in each cookie and place 1 teaspoon of jam into each.
4) Bake for 12 to 15 minutes depending on how you like your cookie. The longer they bake, the more crunchy.
