1 large head cauliflower, chopped
3 tablespoons nonhydrogenated vegan margarine
3 tablespoons vegan mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
1. Add cauliflower to a big pot with water and bring to a boil. Boil the cauliflower for 40 minutes, or until they break really easy with a fork.
2. Drain the cauliflower in a strainer. In a large bowl, mix margarine, mayonnaise, garlic and onion powder and stir to combine.
3. Add cauliflower to the bowl and mash with a potato masher until it is smooth and thick like mashed potatoes. It may take a few minutes to get the right consistency.
Serve with your favorite gravy!
