1/2 (1 pound) package chocolate oreos
1 (8 ounce) container vegan cream cheese
1/4 cup vegan butter, softened
2 teaspoons vanilla
2 tablespoons coffee extract
3-4 cups powdered sugar, divided
1. Grind oreos in a food processor. A finer texture is more desirable than chunky.
2. Add vegan cream cheese and butter. Mix. Add vanilla and coffee extract. Mix again.
3. Add powdered sugar about 1/2 cup at a time mixing after each addition. Spread on cake.
The frosting sets up after a few hours but can be served right away. Refrigerate leftovers.
