1/2 zucchini (small to medium), grated
1/2 cucumber (small to medium), grated
1/2 onion (small to medium), grated
handful cherry tomatoes, sliced
sea salt, to taste
1. For slaw, toss zucchini, cucumber, onion, and tomatoes in a big bowl.
2. Smash avocado into the slaw to make a sauce for the veggies.
3. Afterward, sprinkle 1-2 pinches sea salt on top.
I have a similar recipe that will help you not to waste the other 1/2 cucumber and zucchini; all you have to do is add 1 grated carrot and exclude the onion, and instead of avocado sauce, make a tahini sauce (http://vegweb.com/index.php?topic=41218.0 ). So, now you have 2 similar slaws with different sauces!
