3/4 cup pitted dates
1/3-1/2 cup raw pecans
2/3 cup carrots, shredded
1/2 teaspoon vanilla extract
1/4 teaspoon sea salt
1/2 tablespoon cinnamon
1/2 teaspoon fresh ground ginger
1/2 teaspoon nutmeg
1 (8 ounce) package vegan cream cheese, divided
(I use Follow Your Heart)
1. Combine all ingredients except the vegan cream cheese into a food processor and blend together well.
2. Roll the "dough" into balls and gently press your thumb into each ball. Place 1 teaspoon vegan cream cheese on top of each carrot cake bite.
