3 tablespoons sweet salad dressing
1 tablespoon vegan mayonnaise
1 cup cooked brown rice
1 cup cooked adzuki or turtle beans
1 cup packed baby arugula leaves
5 to 7 red cabbage leaves, sliced
2 carrots, peeled and julienned
6 radishes, thinly sliced
1 hot pepper, to taste, sliced
1/2 green apple, chopped (optional)
Small handful chives, chopped
4 tablespoons raisins
2 1/2 tablespoons sunflower seeds
Dried chili flakes, as desired
1) In a large bowl, whisk the vegan mayonnaise and salad dressing together. Add arugula, cabbage, carrots, radishes, pepper, and apple to the bowl and toss to coat in dressing.
2) Warm the rice and beans and divide equally between four bowls. Divide dressed vegetables on top of beans and rice, dividing between bowls.
3) Garnish with chives, raisins, sprouts, sunflower seed, and chili flakes. Enjoy!
