2 slices tofu
1 teaspoon liquid smoke
Salt and pepper, to taste
1 tablespoon oil
2 slices eggplant
1/4 onion, thinly sliced
1 teaspoon brown sugar
2 slices whole wheat bread
1) Lay tofu and eggplant slices on a large plate. Drizzle tofu with liquid smoke and drizzle the eggplant with oil. Salt both and allow to marinate for a few minutes.
2) Heat a large skillet over medium heat. Add tofu and eggplant slices and cook, turning occasionally, for 10 to 15 minutes. Remove from plan and set aside to cool.
3) Add remaining oil to pan with onions. Cook for about 10 minutes, or until softened. Add brown sugar and continue to cook, stirring occasionally, until caramelized.
4) When onions are almost finished, toast bread and lay on a plate. Add condiments to taste. Add tofu, eggplant, and caramelized onions. Close sandwich and enjoy!
