2 cups fresh carved Pumpkin Flesh
6 oz. Firm Tofu
1 1/2 cups Walnuts
1/2 cup Dried Cranberries
5 Tbsp. Agave Nectar
4 Tbsp. Pumpkin Spice/ a mixture of cinnamon, ginger, nutmeg
4 drops Vanilla Extract
Preheat oven to 350F
In a food processor mix together the Tofu and Pumpkin.
Next add all other ingredients, mix well.
Form mixture into 2" balls & roll in walnuts until well covered.
Place balls on a greased cookie sheet & let bake for 22 minutes.
For more sweetness, agave or brown sugar may be added on top.
