5 Minute Gazpacho
4 tomatoes, sliced
2 red bell peppers, chopped into quarters and de-seeded
1 medium onion, chopped
2 cups (0.5L) vegetable broth
1 tablespoon (15g) ground coriander seed
1 tablespoon (15g) ground thyme
Put the tomatoes, peppers, and onion into a shredder, and let the shredder do its work for a minute or so.
Transfer the shredded vegetables into a pot and add the vegetable broth and spices. Mix well, and voilÃ ! :)
One serving has 47 calories, 0.6 grams of fat, and 3 grams of fiber. Also a good sources of vitamins A, C, B6, and K, as well as folate, potassium, and manganese.
