5 Minute Mashed Potatoes

What you need: 

1 large potato
2 tablespoons nondairy milk (I like Silk)
1 tablespoon vegan butter (I use Soy Garden margarine)
sea salt and pepper, to taste

What you do: 

1. Bake the potato in a microwave for 4 1/2 minutes, or until done. Mash the cooked potato, removing the skin if you wish.
2. Stir in the milk until it's all creamy; put the margarine on top to melt, and sprinkle with sea salt and freshly ground pepper.
Enjoy!
