Amazing Chickpea Herb Salad

What you need: 

4-6 plum tomatoes, chopped
1 cucumber, chopped
1 sweet red bell pepper, chopped
1 green bell pepper, chopped
1/2 medium red onion, finely chopped
2 (15 ounce) cans chickpeas, drained and rinsed
1/4 cup fresh tarragon, finely chopped
1/8 cup fresh basil, finely chopped
1/2 cup fresh flat leaf parsley, finely chopped
1/8 cup chives, finely chopped
2 tablespoons hummus (I used a roasted red pepper kind)
juice of 1 lemon
1 tablespoon liquid sweetener (I use agave nectar)
1/4 teaspoon salt and pepper

What you do: 

1. Place the veggies, chickpeas, and herbs in a large bowl.
2. In a small bowl, whisk the remaining ingredients to form the dressing.
3. Pour the dressing over the veggie mixture, stir, and enjoy!
This is a very versatile salad, so switch up the herbs if you like others better or change the beans to ones you prefer. Hope you enjoy!
Source of recipe: This is kind of a mistake/clean-out-the-fridge salad that turned out surpisingly well, so I thought I'd share!

SO HOW'D IT GO?

This salad came together really nicely and was really cheap and easy to make. I used cilantro, green onion, and basil as my herbs. I also used two tablespoons of Tahini to make the dressing instead of hummus. Yum!

This was a delicious recipe and I was surprised to see no one review it, so let me be the first to say this is the best tasting salad I had in a long time. My kids surprisingly loved it also, so it looks like one of those recipes that will be a weekly thing in our house since it is so simple to make :)
