Amazing Chocolate Avocado Pie

What you need: 

Crust:
2 cups pecans, divided
4-6 soft dates, pitted
1 tablespoon maple syrup
2 tablespoons cocoa powder
1 tablespoon cinnamon
2 teaspoons ground fresh nutmeg
1 tablespoon vanilla extract, optional
pinch sun dried sea salt Filling:
2-3 ripe avocados
1 teaspoon lemon juice
1 teaspoon vanilla extract
12 ounces semi sweet vegan chocolate chips

What you do: 

1. For crust, soak 1 cup pecans in 2 cups fresh water for 2-4 hours. Drain and rinse. In a food processor, chop 1 cup dry pecans into a fine meal. Set aside. Chop soaked pecans into a fine meal.
2. Cut or break the dates into pieces. If the dates are very dry or firm, soak them in 1/2 cup fresh water for 5 minutes to soften. Add the date pieces, vegan maple syrup, cocoa, cinnamon, nutmeg, vanilla, and sea salt to the ground soaked pecans and chop until well mixed.
3. Add the ground dry pecans and chop until well mixed. The dough should be crumbly but sticky enough to hold shape when pressed. Press the dough evenly into a pie plate; it is easiest to press the dough first to the sides of the plate and then press into the bottom for an even depth.
4. For filling, in a blender, cream together avocados, lemon juice, and vanilla. In a double broiler, melt chocolate chips; let chocolate cool slightly.
5. Add melted chocolate to the avocado mixture and blend until smooth. Pour into prepared crust and chill overnight.

SO HOW'D IT GO?

does anyone know if you can use avocado in baked cakes? I'm looking for something to turn a white cake green...lol. It would be fun to use some actual food instead of just throwing in food colouring. Can avocado be used similarly to applesauce in baking?

possibly a small teaspoon (or less so the flavour isn't altered) of spirulina diluted in pure water? spirulina has a VERY bold blue-green color :) not sure if you can 'bake' it though...surely the nutrient value would be skewed but if you're simply looking for color not nutrient-quality, then it may work.

i am soo thinking of trying a RAW version of this...crustless.

Absolutely delicious. I made it with a graham crust as well and added raspberries to the bottom. So good. Would be delicious with any sort of fruit bottom. VERY rich.

Amazing. I had never thought of avocado as part of a pie filling but it is amazing. Me and my wife didnt even finish the pie but instead ate the filling with fruit, ie strawberries and bananas.

Yeah, so I made this again... using VW's Oil Pie Crust recipe, only I had barely enough oil......... suffice to say, pastry-making was very difficult and fiddly. But the AMAZING filling worked like a charm, lovely and simple. I made mini-pies by pressing cirlces of pastry into my jumbo muffin tins. The little darlings were just lovely on their own or with some soy ice cream, and a (frozen) raspberry on top. ;)b

I used the filling for this to make a chocolate mousse.  I made the filling exactly to recipe and then whipped about 2 tablespoons of plain soymilk into it.  It's still really rich so I served it in small chocolate cups, and then I put fresh fruit on top.  Turned out great--thanks for the recipe!  I'm using avocados in more desserts from now on!

hmm, that could work...do you think it would have a strong flavour though? I've never had anything matcha

I'm not sure how using avacado would work, but stirring a couple teaspoons of matcha tea powder in will turn it green, keep it less artificial, and make it seem fancy

This is so good.  I always just use a pre-made graham crust and it's about the easiest dessert you could make.  When I first made it to serve to others, I could barely contain myself while serving my family-finally after they were mid way through I gave them the news that they were eating avocados!!!  To see their faces!  My husband calls this "Guac-olate Pie"  :P
