Amazing Chocolate Chip Cookies

What you need: 

1/2 cup sugar
1/2 cup brown sugar
2/3 cup canola oil
1/4 cup applesauce (or 1 egg substitute)
1 teaspoon vanilla
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
vegan semi-sweet chocolate chips, to taste
nuts, chopped, to taste (optional)

What you do: 

1. Preheat oven to 375 degrees F. Mix first 5 ingredients together.
2. Mix flour, salt and baking soda in separate bowl, then add to the first bowl. Add your chocolate chips and nuts to this mixture. Mix.
3. Drop on ungreased cookie sheets. Bake in the oven for about 8-10 minutes.
I have had nothing but great comments about these cookies!

SO HOW'D IT GO?

Generally okay...
I cooked mine for 13 minutes because they were soft to the touch at the recommended time, but once they'd cooled down they hardened a fair amount.  It made them taste a bit stale even though they were fresh :( 
I think using margarine adds a lot of flavor because they tasted a bit bland, but yes it's less healthy.  I had to add about 2 tablespoons of soymilk to make the dough stick better.  I think it needs a little something else.  Sugar is sweet, but it doesn't make the cookies rich like I expect good cookies to be.

I made these cookies this past weekend and they were a hit!  The cookies were fanastic, and the uncooked dough was really delicious too!  ;D
