Amazing Haupia (Coconut) Pudding/Fruit Dip

What you need: 

1 can coconut milk
5 tablespoons 807]cornstarch
5 tablespoons sugar
1 1/2 cups water

What you do: 

Put coconut milk into a saucepan and bring to a boil on low heat.
In a bowl, combine sugar and cornstarch. Add water; blending well.
Add cornstarch mixture to coconut milk. Stirring frequently with wire whisk, cook over medium heat until mixture thickens. Continue cooking until mixture starts to get translucent, and leaves the sides of the pan.
Pour into bowls and chill until firm.
Also makes AWESOME fruit dip - just stir after refrigerating...my daughter and I LOVE this stuff!!!

SO HOW'D IT GO?

Hmmm, yumm! This was really good. I wasn't patient enough to wait for it to set, so I ate it when it was still warm.

I added a pinch of salt and used agave instead of dry sugar. In the end, I stirred in a spoonful of pomegranate jelly.

If you're a coconut fan, you should try this. I've never heard of haupia or a coconut pudding... I had a can of coconut milk around and wanted to do something with it and this was different, easy, and quick (except for the chilling). Tastes good-- I ate it as pudding with some cinnamon sprinkled on top, and as a dip with a banana. Thanks for posting!
