Angel Hair with Scallion White Wine Sauce

What you need: 

oil to coat bottom of pan
2 Tablespoons vegan butter (optional)
one bunch of scallions (about 5-7) chopped (white and half of green)
2 tomatoes (seeded and chopped)
white wine (one you would drink)
1 lb angel hair pasta
salt and pepper to taste

What you do: 

I just made this off the top of my head the other night and I didn't measure so I just guessed on the measurements here, but I’m sure they're close. It sounds and tastes pretty simple but it turned out really good. My brother actually complimented me on it which never happens (and I’m pretty experienced in the culinary field so it was saying something).
Boil a large pot of salted water. Add pasta and cook until tender.
Coat the bottom of a medium nonstick skillet with olive oil and add butter. Heat to medium-high heat. Add scallions and cook for about four minutes (should be slightly brown) then add tomatoes. Cook for another two minutes then add the wine and reduce.
When pasta is done drain and toss with olive oil to coat (about 2 T.). add scallion sauce and seasoning to pasta and toss.

SO HOW'D IT GO?

This was not very good. The sauce did not make nearly enough for one pound of pasta.  Regardless of the amount, the sauce was bland and boring.  I don't know that I'll save the leftovers, and I know I won't be making it again.  If you're going to make it, you may want to add some vegetable broth to the sauce with the wine.  Also, reduce the pasta to half a pound.

I tried this last night, and it was absolutely WONDERFUL.  I also varied it a little, tossing in some toasted pine nuts at the very end and sprinkling with some fresh shredded parmasean (just a couple extras I had on hand).  If I could give this recipe six stars, I would.  Especially on a Monday night after work.

sorry, the white wine is supposed to be somewhere from 1/2 cup to 1 cup according to your taste. forgot to mention that lol
