Apple Quick Bread

What you need: 

1 cup whole wheat flour
1 cup + 2 tablespoons wheat germ
1.5 teaspoons baking soda
.25 cup raisins
sprinkling of soy protein powder (optional)
1 cup orange juice
1 teaspoon cinnamon
1.5 tablespoon apple cider vinegar
1 tablespoon molasses or brown sugar (optional)
1 apple, chopped into fine bits
1 tablespoon cooking oil

What you do: 

Preheat oven to 350F.
Coat bottom and sides of a 9x9 baking pan with oil. Sprinkle in 2 tablespoons of the wheat germ, and spread evenly over the oil.
Combine 1 cup of the wheat germ, the flour, the cinnamon and the baking soda. Add up to 1 tablespoon of vegan protein powder, if desired. Stir thoroughly. Add raisins and chopped apple.
Make a well in the middle of the dry ingredients mixture. Combine orange juice and vinegar, and pour into dry ingredients. Stir thoroughly, but no more than necessary to combine ingredients. Add 1 tablespoon of molasses or brown sugar, if desired (I sometimes omit a sweetener, since the orange juice, apples and raisins produce a tangy sweetness of their own).
Turn batter into the baking pan. Bake at 350F for 30-45 minutes, or until lightly browned on top.

SO HOW'D IT GO?

I loved this recipe, but I did make some some modifications.  First, I used white flour instead of whole wheat; I also added extra baking soda and a little less vinegar due to prior bad experiences with not "using up" all of the vinegar in reactions with the baking soda, leading to a vinegar-y taste.  Since I like cinnamon and sugar, I added more of those, too =)

Then I made a glaze and topping to put on about fifteen minutes into the cooking.  The glaze consisted of orange juice, apple sauce, egg replacer, cinnamon, wheat germ, brown sugar, allspice, ground cloves, nutmeg, lemon peel, and vanilla; on top of that I put a topping of wheat germ, sesame seeds, cornflake crumbs, brown sugar, almonds, and pecans.  It ended up tasting delicious, a lot like gingerbread (but without the ginger).  The careful documentation is mainly to provide some background for the somewhat surprising picture given the recipe.

Anyway, thanks; this was really easy to make and tasted delicious (especially served with applesauce).
