Applesauce Muffins

What you need: 

1 cup whole wheat flour
1 cup oatmeal
2 teaspoon baking powder
1 teaspoon cinnamon
few dashes ground cloves
1/2 cup chopped walnuts
1/2 cup raisins
2 eggs worth of egg substitute (I use 2 1/2 teaspoon Ener-G Egg Replacer powder plus 2 tablespoons warm water)
enough applesauce to make consistency good

What you do: 

Mix dry ingredients. Add applesauce and stir until consistency is good, then add prepared egg replacer and mix again. Transfer to muffin tins (nonstick, or oil them) and bake at 375(o)F for about 25 minutes (depending on the size of your muffin tins.
I made up this recipe when I bought a huge jar of sweetened (ick) applesauce so I could use the jar for soup...and somehow it turned out super tasty!
You can add sweetener if it is not sweet enough for your taste.

SO HOW'D IT GO?

These were really good!

I put chocolate chips in instead of sugar for added sweetness and didn't put any nuts in. also put some nutmeg in just for fun.
