Arroz sin (without) Pollo

What you need: 

4 teaspoons olive oil
1 medium onion, chopped
4 garlic cloves, minced
2 large tart apples, chopped
3 medium squash, cut into large chunks
1 (14 1/2 ounce) can tomatoes and chilies
1 cup brown rice
2 cups vegetable broth
1/2 cup water

What you do: 

1. Heat oil over medium high heat in pot. Add the onion and garlic. Cook until tender and translucent.
2. Add can of tomatoes/chilies, apples, and squash. Cook about 5 minutes more. Stir well and add rice.
3. Cook, stirring for 2 minutes. Add vegetable broth and water. Bring to boil over a high heat. Reduce heat to medium-low and allow to simmer for 45 minutes-1 hour (or until liquid is absorbed and rice is tender).
Serve hot with black beans. So great!
