Asparagus, Lettuce, and Tomato Sandwich

What you need: 

1 can white asparagus (in water)
tomato
lettuce (I like green leaf)
vegan mayo
salt or pepper to taste
French bread

What you do: 

This is a sandwich that I discovered in Belgium. Its very simple. I found white asparagus canned at my local grocery store.
Slice the French bread to whatever size sandwich you want to eat!
Add sliced tomato, lettuce, asparagus, and vegan mayo. Enjoy!
I put the asparagus on a paper towel first to absorb the water.
You can also toast the French bread first and add a little vegan mayo.

SO HOW'D IT GO?

I've been making a version of this for years in memory of a summer I spent in Spain.  I ate a "Sandwich Vegetal" at least every other day when I was there.  I found jarred white asparagus at Whole Foods.  Build sandwich on white or wheat bread, put margarine on the outside bread and grill sandwich in a pan.  I'm not sure if I just like it because it brings back memories, because I can see how the thought of wilted lettuce and warm mayo could seem gross. But I love it! Give it a try  ;)b

I was looking for something to use up my asparagus and stumbled upon this..

Like the other user I sauteed it in a little bit of butter...while it was sauteeing I threw in sliced red onion some pepper and a little bit of garlic salt....
It came out soooo good. It's one of my favorites now! Thanks!!! : D :)>>> :)>>>

;)b  I loved this!  very quick and easy to make.  I used fresh Asparagus as well.  Very filling and tasty!

This recipe is sooo delicious I used fresh green asparagus and sauteed them in a little butter for about 10 min, so they still had a crunch to them and not all wilted and mushy. I seasoned them with salt and pepper and also used a little lemon pepper, the lemon pepper makes it sooo much better. After I sauteed them I drained them on some paper towels so my sammie wasn't soggy. Then toasted the bread a little mayo, tomato, lettuce  and I used a little red onion. SOOO GOOD!  :)>>>
