Avocado Sorbet

What you need: 

1 cup sugar
1 cup light corn syrup
2 cups water
1 teaspoon grated lime peel
3 avocados, seeded, peeled and mashed
2 tablespoons lemon juice
1 tablespoon lime juice
fresh raspberries, optional, to serve
crisp cookies, optional, to serve

What you do: 

1. Bring vegan sugar, corn syrup and water to boil in large saucepan. Remove from heat; stir in lime peel. Cool 50 to 60 minutes.
2. Blend avocados and lemon and lime juice in blender or food processor until smooth. Add cooled vegan sugar mixture; blend until thoroughly combined.
3. Pour into 13 x 9 x 2 inch pan or 2 smaller pans so depth is about 1/2 inch. Freeze 1 hour. Remove sorbet from freezer, beat 2 to 3 minutes until light and creamy.
4. Pour back into pan; cover with plastic wrap and freeze until firm, about 4 hours. Serve sorbet with fresh raspberries and crisp cookies.'

SO HOW'D IT GO?

I came on here this morning looking for a different way to use up some ripe avocados and I found it! This was great. I just tried my first spoonful. I only had 2 avocados so I did 2/3 the amount of sugar and water to compensate. Loved it.

i cannot BELIEVE no one has reviewed this recipe!  oh my word, what a fantastic treat!  where i live, this is an absolute luxury, since an avocado is usually $2 or more, and a lime is about $1 for some puny little half-ripe thing.  lucky for me, i work at a grocery store and was able to con the produce man into hooking me up.  SO WORTH IT!  i only had two avocados, so i halved the liquid thinking it would turn out extra creamy.  i was right.  in fact, i recommend doing it that way, i don't think you really need THAT much sugar/corn syrup to sweeten and thicken it.  i used dark brown sugar and dark corn syrup, because it was all i had (and because i love molasses flavor), and it turned out great, i'm assuming the recipe calls for light syrup and white sugar simply because the darker versions turn it an unseemly brownish color.  but it's SO SO good!  a scoop goes great with hot pineapple pie, or, my new FAVORITE treat:: broil half a pink grapefruit until slightly browned on top, cool for just a couple minutes, and then spoon a mountain of this sorbet on top.  YUM!!!
