Avocado Toast

What you need: 

2 slices multigrain bread
1 avocado, pitted and scooped into a bowl
1/4 teaspoon lemon juice
1 teaspoon olive oil
1/4 teaspoon red pepper flakes
pinch salt

What you do: 

1. Toast the bread to your desired crispiness. Mash the avocado with lemon juice. I find a potato masher works best but a fork works as well.
2. Spoon half of the avocado mixture onto each piece of bread and push down so it covers the bread thickly and evenly. Drizzle olive oil over the avocado mash.
3. Sprinkle salt and red pepper flakes on top.
Enjoy!

SO HOW'D IT GO?

This was so, so good! I may have been a little strong on the lemon, but it was still delicious. Avocados are, by far, my favorite. ^^

Great recipe, I use avocado as a spread on my toast or bagel all the time, thought usually with salt, pepper and red pepper flakes, your lemon idea is even nicer, thanks!

Wow, this was a wonderful way to use up an avocado!
I happened to not have lemon juice on hand, but as a substitute, I used a few drops of soy sauce to mash up the avocado with... I think it gave in an extra kick of flavor.  :)

next time i have a lemon and red pepper flakes, i'll try this version. i make something similar but even simpler. just mash 1 avo with salt and pepper. it makes enough for 4 pieces of toast. soooo delicious and i dont usually even like avos
