Awesome Loaf

What you need: 

1/3 pound tofu (firm or extra firm)
1 1/2 cups cooked brown rice
1 1/2 cups cooked kidney bean or lentils
1/3 cup ketchup
2 tablespoons Dijon mustard
1/2 small onion
1 clove garlic
salt and pepper, to taste
thyme, to taste
sage, to taste

What you do: 

1. Preheat oven to 375 degrees F. Lightly oil a loaf pan.
2. Blend all of the ingredients in a food processor until combined.
3. Press mixture into prepared pan, and bake 60 minutes.
This tastes amazing on a sandwich.

SO HOW'D IT GO?

Awesome it is! I used black beans cause thats all I had added one boiled carrot and one onion.  The outside edges burned a little...I think 40 minutes is enough.  I added dried cilantro, cumin and some nutrional yeast.  My bf wanted to eat it even before I put it in the oven.  I always have these ingredients in the pantry so it made a quick and healthy meal.  Tomorrow....sandwiches!!

The black specks you see in the pic is the black beans.  This was my 1st photo attempt!!!
