Baby Bok Choy With Cashews

What you need: 

2 tablespoons olive oil
1 pound baby bok choy, trimmed and washed
1 tablespoon garlic, minced
1 cup green onions, chopped
1 teaspoon sesame oil
salt, to taste
1/2 cup cashews, chopped

What you do: 

1. Heat olive oil on a medium-hot stove (in saute pan), add onions, garlic, and bok choy.
2. Sprinkle with sesame oil and salt. Stir, so that the bok choy is reasonably coated by the oils.
3. Cover the pan and let the bok choy cook until slightly wilted (about 3 1/2 minutes).
4. Remove cover and reduce heat to low. Stir and let cook one more minute. Stir in cashews, serve, enjoy!

Amazing, I have made this recipe so many times and love it more each time.  I do like to add a bit of Bragg's Aminos or Organic Soy Sauce to it....but not too much!
