Baked Bell Pepper And Corn Salad

What you need: 

4 medium bell peppers in various colors
1 medium onion
1 can of corn
1 garlic clove
1 tablespoon oil
1 tablespoon balsamic vinegar
thyme, oregano
salt, pepper

What you do: 

Preheat oven to 390F.
Slice your vegetables into thin strips.
Chop garlic.
Put everything except corn in a loaf pan covered with oil. Bake in oven for 10 minutes, stir, and bake 10 more minutes.
Now mix in the corn and chill or eat warm. If you like it hot, add chili.

SO HOW'D IT GO?

I did what ampallang (comment before me) suggested and added kidney beans. It seemed a bit light on spice, so I put in some chilli powder and seasoned salt. It came out very good!

Simple and tasty. Silly me, I didnt cook the garlic... but a little raw garlic never hurt anyonne too much.

Might be good with some lima or kidney beans too, for a main meal.
