Baked Browned Zucchini
4 medium zucchini, sliced 1/4" thick
pepper, to taste
3 tablespoons all purpose seasoning (I use spike)
3 tablespoons nutritional yeast
2 tablespoons olive oil, divided
1. Preheat oven to 400 degrees F. Use half the oil to grease a 9x12" pan. Boil zucchini for about 2-3 minutes. Drain.
2. Arrange zucchini in layers alternating spices. Bake uncovered, 20-25 minutes.
3. Change oven temperature to 475 degrees F, until golden brown.
