Baked Oatmeal Breakfast Pie

What you need: 

1/2 cup applesauce or pureed pumpkin
3/4 cup sugar
Ener-G egg replacer for 2 eggs
1 cup vanilla soymilk
1/2 teaspoon ground sea salt
1 tablespoon baking powder
3 cups dry oatmeal (instant or regular)
1/2 cup of raisins
1 or 2 tablespoons brown sugar
1/2 teaspoon cinnamon

What you do: 

Beat together applesauce and sugar.
Mix in egg replacer, soymilk, salt, baking powder, and oatmeal.
Beat well then stir in raisins.
Pour into a lightly greased pie pan.
Sprinkle with brown sugar and cinnamon.
Cover and refrigerate overnight (or 8+ hours).
The next morning, preheat oven to 350 Fahrenheit. Bake, uncovered, about 35 minutes or until firm. Serve hot.

SO HOW'D IT GO?

Yum.  So the first time I made this, I followed the instructions to a T, only I accidentally used only 1 tsp of baking powder instead of a tablespoon (and plain almond milk + 1 tsp vanilla)... and it was still yummy, but more dense and very moist, like a dense but crispy oatmeal.  My husband loved it.  The second time, I reduced the sugar to 1/2 cup, added 1/2 cup of dried banana chips (in addition to the raisins) to the mix and sprinkled 1/4 cup chopped walnuts on top (in addition to the cinnamon brown sugar), and used the 1 Tbs of baking powder... deeeeelish!  If you're wondering, the texture is much more cakey, light and dry (which is preferable to me) and less mushy and dense with the proper amount of baking powder.

I'm always on the lookout for good oatmeal breakfasts for the kids, and they really liked this.

I did do a few things differently. I used 1/2c of sugar(as suggested by previous responders), 1tsp vanilla extract, 2/3c plain almond milk and 2c oats(b/c I didn't check before I started, and that was all I had). It seemed a little watery when I put it in the fridge last night, but it came out perfectly. I ended up baking it for just under 40 min., but it was cooked all the way through. It was sweet enough, but not too sweet... really good!

Will def make this again, I really like the combo of cranberries, walnuts, and coconut, so I may try it w/ those ingredients next time.

This is a pretty sweet cereal.  I made it for a brunch, so the sweetness was fine.  If I made it for first thing in the morning, I'd probably cut out some (but not all) of the sugar.  I also mixed a teaspoon of cinnamon in with the applesauce.  I had raisins, so I added them, but I'd like to try this recipe with currants.  And chopped apples.  I think there are a lot of ways to play around with it.  I'd definitely make this again because it was so easy to mix the night before, bake the morning of, and have lots of yummy hot cereal to share. 

Mine cooked all the way through.  Maybe gawok and I used different oats?  I used Quaker Old-Fashioned.

YUM! I loved this! It was super easy to prepare, and it was so tasty and filling!

This went great! 
My co- workers were shocked to hear this was vegan.
The day after I baked it, I put my last peice in the microwave and zapped it too long- it was way too hot- so I put some soy coffee creamer over it, and WOW!  I cannot describe how tastey it was. 
I didn't think the recipe was too sweet or anything, and the only alteration i made was that i added a little nutmeg.

This is a very filling and yummy breakfast but WAY too sweet for my liking.. and I LOVE sweet things!  I would at least half the sugar recommended next time around.  Also be careful, it may seem cooked on outside but mine was still a bit raw in the middle so be sure to use a skewer to test the inside.
