Baked Potatoes Au Gratin

What you need: 

4-5 medium Yukon gold potatoes, sliced
1/2 cup chopped spinach, optional
vegan butter, to taste
2 cups plain nondairy milk (I use soy)
2/3 cup nutritional yeast
1 tablespoon flour
vegan bacon bits, to taste
French fried onions, to taste (I use French's)
salt and pepper, to taste

What you do: 

1. Preheat oven to 375 degrees F. Place potatoes in a casserole dish. Add spinach and top with butter.
2. In a separate bowl, whisk together milk, flour, and yeast. Pour onto potatoes. Top with vegan bacon bits and fried onions.
3. Cover and bake for about 1 hour, or until the top is browned and potatoes are cooked. Top with more vegan bacon bits and fried onions. Serve.

SO HOW'D IT GO?

I thought these were great!  We added some sliced onions and some garlic powder and sea salt and didn't use bacon bits or fried onions.  Will definitely be a good one to keep around for cold fall/winter nights that will be here soon enough.  Didn't even taste vegan to me.

I didn't care for this much at all....the nut. yeast tasted fake and awful I wish I liked it cause it sounded so delicious. The only thing I didn't put in it was bacon bits. I feel awful because I'm the only one who didn't care for it.

Did you use the recipe's original "cheese" ingredients? Because when I first made this recipe, I also wasn't fond of the yeast and soy milk mix (no offense to the author of the recipe!). You may want to try using the Nutritional Yeast Sauce recipe (another "cheese" sauce recipe located on Vegweb) instead of the yeast and soy milk mix in the original recipe. You're going to have to double the Nutritional Yeast Sauce recipe in order to fit this one. Top that with bacon bits, french fried onions, and crushed red pepper flakes (if you like a little spice) and it's pretty tasty. Anywho, if you try it again, I hope it turns out for you.

This was pretty good. The sauce didn't have enough of a cheesy taste for me, though. I ended up cooking up a batch of Nutritional Yeast Sauce (recipe on this site) to pour on the leftovers. I liked it much better that way. I do like the addition of the spinach, bacon bits, and french fried onions. I couldn't find any french fried onions at the store I went to, so I just made my own.

When I cook for my family, it is always vegan food that I cook.  This recipe I have done twice and it has been a big hit with my omnivore family.  Thanks for a great recipe! ;)b

This recipe is amazing.....all I can say is yum yum yum.....no substitutions or alterations needed...perfect just how it is! ::)

I also want to mention, I always eat this with green beans, I think the flavors compliment each other nicely.  ;)b

Oh Gosh! Sorry, cook at 375 F until potatoes are tender.
