Banana Almond Bread/Muffins

What you need: 

1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup mashed banana (about 2 bananas)
1/2 cup turbinado sugar
1/4 cup vegetable oil
1/4 cup soy milk
1 - 2 teaspoon almond extract depending on how almondy you want it, or if you just want plain banana bread don't mix in the almond extract at all and just add more vanilla
1 teaspoon vanilla extract
Ener-g Egg Replacer- enough for 2 eggs
slivered almonds (optional- add howe'ver many you want, probably about 1//4- 1/2 cup would be good)

What you do: 

Preheat oven to 350. Mix all the wet ingredients (banana, soymilk, oil, egg replacer, almond extract, vanilla extract) plus the sugar and almonds in a large mixing bowl. Set aside. Mix the flour, baking powder and salt in a small bowl and then sift it into the wet ingredients. Mix until moist but don't over mix. Pour into a greased loaf pan or muffin tins. Bake for 25-30 minutes and check with a toothpick to make sure its done. Let cool and then enjoy!
