Banana Black Beans

What you need: 

2 cups cooked black beans (if using canned, rinse well)
1/2 cup coconut milk (light can be used)
1/4 cup plain nondairy milk (I use soy)
2 stalks green onion, diced
1 heaping teaspoon hot chili powder
2 bananas, chopped into 1/2" pieces

What you do: 

1. Place cooked black beans into a medium saucepan with coconut milk and nondairy milk and heat on medium-low for about 3-4 minutes. Stir occasionally.
2. Add chopped green onion and hot chili powder, and allow the liquid to reduce and become bubbly, still stirring occasionally.
3. Add chopped banana, stir, and allow to heat through. (banana shouldn't be added too early or else the pieces lose their shape and become mushy). Add more milk(s), if needed.
Served on a bed of brown rice, with a salad on the side this is easily one of my favourite quick and healthy meals and is so, so delicious!!!

I wasn't very fond of this recipe. I just felt like something was missing and I couldn't figure out what it was. I'm glad everyone else likes it though, maybe there is something wrong with me, lol.

I made this knowing I was getting some cavities filled by the dentist and didn't want anything I had to chew too much. This was so great, a nice basic flavor that you could add to or just eat as is. And, perfect for those too lazy to chew.

This is an amazing little recipe!!  :D  So simple, yet so incredibly tasty.  Perfect summer dish to accommodate some malibu bay breezes.

This is by-far the best recipe I have found on Veg Web. I LOVE this dish - so simple, yet so refreshing. I follow the recipe exactly. My only complaint is that the I found the bananas the next day (the ones in my leftovers) to have an rubbery texture and an odd taste. I don't normally have leftovers though,v since this dish is just so tasty.

This recipe is so simple and easy to prepare, and it is delicious!
I didn't have coconut milk, so I added extra soy milk. I also sprinkled in some cinnamon. This is one of my new favorite recipes, and I will be making it again soon!

Easy and amazing. I went ahead and added chopped avocado and extra green onion. I served it over a ball of sticky rice and I couldn't believe how amazing it was. I will make this one a weekly ritual! My sister and I ate it with a green salad.
