Banana Black Beans

What you need: 

2 cups cooked black beans (if using canned, rinse well)
1/2 cup coconut milk (light can be used)
1/4 cup plain nondairy milk (I use soy)
2 stalks green onion, diced
1 heaping teaspoon hot chili powder
2 bananas, chopped into 1/2" pieces

What you do: 

1. Place cooked black beans into a medium saucepan with coconut milk and nondairy milk and heat on medium-low for about 3-4 minutes. Stir occasionally.
2. Add chopped green onion and hot chili powder, and allow the liquid to reduce and become bubbly, still stirring occasionally.
3. Add chopped banana, stir, and allow to heat through. (banana shouldn't be added too early or else the pieces lose their shape and become mushy). Add more milk(s), if needed.
Served on a bed of brown rice, with a salad on the side this is easily one of my favourite quick and healthy meals and is so, so delicious!!!

this is fast becoming my favorite (fast + cheap + tasty + filling) recipe.
a can-o-beans, half a can-o-coconutmilk, one bananer, some cumin and chili powder, and a grilled tortilla.
yes yes yes, yum.

OMG!!!!!!!!!!!! SO GOOD!!! srsly.. these are so damn tasty.. i made some changes (i dont think i can make a recipe without making changes haha)

my beans would not get soft even after 3 hours of cooking them, so i gave up and blended them with about a 1/2 cup of water until they were the consistency of really really coarse cornmeal...

then I fried them and the onions in a few tablespoons of coconut oil.. after that finally got them soft, i threw in the milks and spices (i doubled the chili pepper cuz i like it spicy and added a teaspoon of cumin) let that cook for a few mins, then at the end i threw in a couple spoons of nutritional yeast, some salt and the juice from a quarter lemon to bring down the sweetness just a bit..

they smelled like they had butter in them, but have a really surprising taste.. i ate a spoon and went "mmmmmmm yummy!" and now i am eating tacos with them :)

next time i make them i will succeed in getting my beans soft and try this with whole beans... but they are super good refried like i just made them.. thanks so much, i never would have thought of this on my own..

Really glad to have found this recipe :) Working on a variation using curry powder & mashed bananas - eager to see where that leads.

I gave this recipe a try in my continued attempt to get my kids to eat more beans. The addition of bananas seemed really odd for my tastes, but almost assured my kids would eat it. They did of course, and I was surprised at how much I enjoyed it as well!

I served it over rice, and next time will use more liquid to make it a bit more saucy. Thanks for the recipe!

I was pleasantly surprised by how good this was! I was a little unsure of the combination but it is definitely a keeper! I did add a pinch of cumin because I used spicy paprika instead of cayenne. I was prepared to be underwhelmed, but it is GREAT!

Yummers! I just had this again for dinner last night and I forgot how good it is. It seems like a strange combo but the banana and black beans complement each other so well.
