Banana Bonanza Bread

What you need: 

6 ripe bananas
1/2 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
cinnamon, to taste

What you do: 

1. Preheat oven to 350 degrees F and lightly coat a loaf pan with nonstick spray. Mash the bananas (better if they're a bit overripe) until not quite smooth (we kinda like it a bit chunky!).
2. Mix in the sugar and vanilla until incorporated. In a separate bowl, sift the dry ingredients together, then add to the banana mixture and stir until blended.
3. Pour into prepared pan, and sprkinle some cinnamon on the top, if desired. Bake for 1 hour.
This recipe is so ridiculously simple but so delicious! It seems to come out perfect every time, in every kind of dish we've tried baking it in! Enjoy with a tall glass of vanilla soy milk! Yum! Healthy eating!

SO HOW'D IT GO?

I love this recipe! I've used it many times and the most recent I used lemon extract and almond slices. It turned out deliciously! My grandmother loved it, as did my friends. I can't wait to play around with it some more :)

this was really good, although i found it to be a bit chewy. does anyone have any ideas about what to add to this recipe to make it less chewy? oil or margarine maybe?

This is amazing. I make it whenever I have overripe bananas, sometimes when my bananas really aren't ripe enough for it, and always when Safeway is selling overripe organic bananas for $50 cents-for-6 (perfect!). It's dense, but I really like it that way. So moist. I think I might try what Blackberry Vines did, and double to leavening and see how that is, but I like it as is, too. I also LOVE how simple this recipe is, it's like it's really just bananas, sweetener and flour. YUM. The only thing I do differently is add more spices: I usually add 3-4 cinnamon jar shakes worth of cinnamon, and 2 jar shakes of: ginger, nutmeg and cloves, and 1 jar shake of cardamom. YUM. sometimes I dust rolled oats on the top before I bake it for presentations. YUM. Recipe well done.

I made this recipe several times and it came out dense.  This time I decided to double the leavening (and omit salt as baking soda has so much of it) so the recipe was: 3 bananas, 1c whole wheat flour, 1/3c brown sugar, splash of vanilla, 2 shakes of cinnamon (shake the cinnamon jar twice??), 1t baking powder, 1t baking soda.  It was light and fluffy and perfect.

I have this in the oven right now and it smells delicious!! I altered the recipe by using buckwheat flour and date sugar so im very anxious to see how it turns out!!

Awesome!!! I don't add any sugar but I do add a little applesauce to help with the moistness and a bit of nutmeg for some punch!

YUMMY! I'm not sure why the other nana breads seem to be more popular. This one has no oil and is perfectly yummy without even applesauce. Great recipe for those with unstocked cupboards. My daughter loves it! The next frontier: adding blueberries!

Wow! This was really good! Just finished baking and already half the loaf is gone! I used 1c AP flour and 1c whole wheat flour, also added a handful of chopped walnuts. Next time I might add some blueberries just to change it up a bit. Thanks for the recipe! Wonderful!!

I have this in the oven at mo....def shouldnt be baking when have finals in 2 weeks but couldnt resist  :)

I followed all the directions and found this to be a very very very dry recipe.
I felt like I was eating sand.
