Banana Bread

What you need: 

1 teaspoon vinegar
1/3 cup nondairy milk
1 3/4 cups flour
1 1/2 cups vegan granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed bananas (2 to 3 bananas)
1/2 cup vegetable oil
2 to 3 egg replacers (3 1/2 teaspoons Ener-G + 5 tablespoons water)
1/2 cup pecans, optional

What you do: 

1. Preheat oven to 325 degrees F. Grease a 9x5" bread pan. For buttermilk, place vinegar in a measuring cup. Add nondairy milk to 1/3 cup line. Mix and set aside.
2. In a bowl, mix together flour, vegan sugar, baking soda, and salt. In another bowl, mix together bananas, oil, and buttermilk mixture.
3. Combine the banana mixture and flour mixture; stir well. Stir in the egg replacer and then stir in pecans. Pour into prepared bread pan. Bake for 1 hour and 15 minutes, or until a toothpick in the middle comes out clean.
I made this earlier today, and it was delicious! It tasted just like the banana vegan bread my mom used to make. It also rose perfectly, unlike most vegan breads and cakes I usually make. This is perfect with some vegan butter (like Earth Balance). I hope you enjoy it as much as me (and my non-vegan family) did!

SO HOW'D IT GO?

5 STARS!!  This bread was incredibly easy to make and tasted great.  It was extremely moist and quite wonderful!

Not bad, but extremely too sweet!  If I use this recipe again I'll cut the sugar amount in half (at least).

I'm cooking this with smashed persimmons right now. I used no sugar and only 1/4 cup agave nectar. They look and smell delicious, I hope they taste good though!!

Wow, this recipe is outstanding!  Before I became vegan, I always used the Mrs. Field's banana bread recipe and thought I would never find a vegan recipe that equaled it.  Well, this one is way better!  I followed many of the suggestions above:  I used half white flour and half wheat flour, cut the sugar down to 1 cup, and subbed earth balance for the oil.  I made two loaves -- to one I added vanilla, cinnamon and chopped pecans, and to the other I added vegan chocolate chips.  They both came out beautifully.  Great recipe!

I tried this again with applesauce and it turned out awesome!  Oil was great and so was applesauce.  I also added a few drops of vanilla.  Next time I will cut more sugar from the recipe.

This is the first vegan baked good I have made and I was so impressed with its flavor, texture and appearance.  I loved it!  I served it to two friends who are not vegan or vegetarian and they thought it was great.  I used 1/4 cup oil and two bananas.  My bananas were in the freezer, so when they thawed they were a little runnier than usual (this seemed to be a good thing).  Next time I'm going to try applesauce instead of oil, 3/4 cup sugar and three frozen (then thawed) bananas.  Thanks!
