Banana Ice Cream

What you need: 

3 ripe bananas
2 cups low fat nondairy milk
1/2 cup sugar
2 teaspoons vanilla extract
pinch salt

What you do: 

1. Place all ingredients together in a blender or processor and puree.
2. Freeze the mixture in an ice cream maker according to the manufacturer's directions.

SO HOW'D IT GO?

I found a similar recipe which calls for peeling/freezing the bananas ahead of time, then adding 2 tbs coconut milk, 2 tbs honey or sweetner, 1 tsp vanilla, then blending all in the food processor. It turned out great, and you get instant gratification if you throw those over-ripe bananas in the freezer whenever you have them.

One other change I made: I used almond milk instead of the soy milk. Perfection  ;)b

This was delicious! Although, I made a few modifications: instead of 1/2 cup of sugar, I used 1/4 cup agave and 1/4 cup brown sugar. I also added unsweetened coconut flakes, chocolate chips and chopped almonds. YUM! Thanks for sharing!

I make something very similar to this, but I don't add any sugar or salt. I use frozen banana, vanilla soy milk, and depending on my mood...peanut butter, carob powder, strawberries, etc (or a little of everything!). It's so creamy and tastes better than ice cream to me!
