Banana Nut Bread Cookies

What you need: 

1 1/4 cups flour (I use unbleached, all purpose)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1/2 cup oil (I use canola)
1/2 teaspoon vanilla
4 tablespoons nondairy milk
1 banana, mashed
1 teaspoon baking powder
handful walnuts, crushed

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Mix together flour, soda and salt in a small-medium bowl and set aside. Lightly grease a cookie sheet.
2. In a large bowl, mix together oil, sugar, milk, and vanilla. Mix in mashed banana and baking powder. Add ingredients in the small bowl and stir well.
3. Once it is well stirred, lightly mix in the crushed walnuts. Drop by tablespoons onto prepared cookie sheet. Bake 9-12 minutes (depending on your oven).
For a less greasy mixture, I'm sure you could add more milk and less oil, but I haven't tried it yet. And this recipe only makes 12-13 cookies for me, but I like to make giant cookies (heaping tablespoons for me!).'

SO HOW'D IT GO?

Delicious. I thought I had ruined the recipe because I mixed up where and when to use the baking soda and baking powder, but they still turned out delicious and fluffy. A really nice combination of muffin & cookie.

Perfect with vanilla almond milk!

These are the easiest and tastiest cookies!  I think this should be a recipe given to all new vegans-- so simiple and tastes excellent.
I made these cookies last night, and my omni bf and I couldn't stop eating them.  I added about 1/4 cup ground flaxseed and only 1 cup of spelt flour.  Also added about 1/4 cup of walnut chips.
These were so tasty with a cool little crunch from the flaxseeds and the chips.

Just made these, super easy and tasty to match. I was feeling lazy so I just threw all the ingredients in a bowl together. Next time I will add more sugar as mine were not that sweet. Thank you for the recipe. I'm sure I will make again and try some other variations as well.

I really hate to say this, but these cookies just aren't very great. The recipe has far too much oil in it for that amount of dry ingredients, so I used only 1/3 cup oil (I looked at other oil recipes and thought this might be a good ratio). I followed everything else exactly, and the dough was..gummy? Very very wet. So, I added a handful of oats. It still wouldn't stiffen up. So, I kept adding more flour to try and get it to look like cookie dough and not batter. Finally, I gave up and decided to try it, although it was hard to shape the cookies because the dough was runny. I baked them 12 minutes, and they browned. But they never really crisped up or looked like a cookie. They actually look like quick bread batter that's been baked on a cookie sheet. They're really really soft, to the point of mushiness. I've never had a cookie recipe not work for me, and I don't know what's wrong with this one. I'm really disappointed.

On a good note, the taste is absolutely delicious, no problems there. If they can just be more cookie like and less cake like, then we're in business. I'm taking them to rock climbing club even though they didn't turn out like I had hoped. They'll never know, right? :)

Super Yummy.

All my OMNI co-workers loved them. My roomates loved them and most of all I LOVED THEM.

I added seedless organic raisins for sweetness and subed applesauce for oil and agave for suger. They came out delicious. I used more soymilk than recommended and tweeted around with almond extract instead of vanilla. I couldn't keep my hands off of them!

these were really nice... my husband wanted me to make banana muffins, and i wanted cookies... so i made these. they are definitely cake-y.  i used macadamia nuts which added a really good flavor.

These cookies are pretty tasty! I used 1 1/2 bananas, cut the oil in half, subbed 1/2 honey for the sugar and added some powdered ginger & allspice. The dough was great cookie consistency without the soymilk, so I didn't use any milk. Thanks for the recipe. These are really cake-y, more like muffins. Delish!

The recipe is kind of confusing and could have used a couple of edits before being posted, but I still followed it as best as I could.  I ended up with something that probably would have made tasty muffins, but awful cookies.  I made a double batch and added another half a banana, probably 1/4 cup of sugar and a 1/4 cup of flour to the dough, as well as about another 1/2 teaspoon of salt.  Then I liked the dough.

I also used Rice Nog instead of soymilk, but no more than 2 tablespoons, even for a double batch.  I think this recipe has a lot of potential but really needs some tweaking, otherwise it produces what I would consider a sweet biscuit, rather than a tasty cookie.
