Banana Spice Cake

What you need: 

2 cups flour
1 1/2 cups sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed ripe bananas (about 3 bananas)
1/2 cup soy buttermilk (1/2 cup soymilk + 1/2 tablespoon lemon juice)
1/2 cup vegan butter
2 egg substitutes (I use Ener-G Egg Replacer)
1 teaspoon vanilla
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon cloves

What you do: 

1) Preheat oven to 350 degrees Fahrenheit. Grease and flour pan(s).
2) In a bowl, combine flour, sugar, baking powder, baking soda, spices, and salt. Add banana, buttermilk, vegan butter, "eggs," and vanilla. Beat with an electric mixer on low speed till combined, then beat on medium speed for 3 minutes.
3) Pour batter into one 9x13" pan or two 8" or 9" round pans and bake for 35 minutes.
*I used 1/2 white, 1/2 ww flour and 1/2 white, 1/2 brown sugar.
