Banana Tofu Pudding

What you need: 

16 oz. silken tofu
2 ripe bananas
1 teaspoon vanilla
2 tablespoons liquid sweetener of choice

What you do: 

Put all ingredients in food processor or blender, until smooth, chill and enjoy!

SO HOW'D IT GO?

We really enjoyed this. I only had a smaller silken tofu, not sure they make them in 16 oz. anymore. It was kind of weird to have the pudding turn grayish, may add a tish of lemon juice next time, even if I have to add a bit more sweetener. Even the picky 17 year old like it!

This was great!  But of course I didn't follow the recipe exactly (who ever does?).  But I used this frozen "mixed berry" mix, some maple syrup, silken tofu, dash of vanilla, and half of a banana, and even my semi-picky 13 month old son loved it.  I think this is going to go on the "eat on a regular basis" list.  As in at least once a week.
