Barb-B-Que "Chickin" A-La-Big-Al

What you need: 

2 baking potatoes
fake chicken strips made by Lightlife
1 bottle of your favorite B-B-Q sauce
cheddar soy cheese, optional
soy sour cream, optional
scallions, chopped for garnish
non-hydrogenated vegan margarine / soy butter, optional.

What you do: 

I craved a version of a chicken dish from Sticky Fingers Bar-B-Q restaurant and veggie-ized it.
Bake potatoes as you wish- in oven or microwave. Meanwhile, stir fake chicken strips and barbeque sauce together in a skillet and cook on med-high heat to med-low heat towards end so that chicken strips get sticky and not just wet with sauce. (Cook it to desired consistency. I like it cooked down and sticky). Just don't burn it.
When potatoes are done, split them open across the top, squish the insides up with a fork a little and mix in a little butter-substitute if you like.
Top potato with your fake BBQ-ed fake chicken and then top with soy cheese substance if desired and fake sour cream if desired and sprinkle with chopped scallions.
WARNING! TOO EASY AND WAY ADDICTIVE! One my most favorite concoctions. This will hold up well for a day or two in the fridge, too.
Great recipe for single people.

SO HOW'D IT GO?

Forgot to mention, I served this with broccoli.  To me, this kind of meal cries out for green veggies to make it a little healthier.

Great, easy recipe, Big Al!  I made this for lunch today, and it is really tasty!  I only made a couple minor changes:  1) used a different brand of vegan "chicken" strips, 2) forgot to add the scallions, and I was too hungry to go back and get them, and 3) added a bit of extra seasonings like Mrs. Dash to my potato.  I did add the optional vegan "sour cream" (Tofutti), vegan "cheese" (Follow Your Heart monterey jack), and vegan margarine (Earth Balance).  I'm sure I'll be making this combo again.
